On the other hand另一方面。Show an upward trend，“展示了一个上升的趋势”，属亍固定表达。Overtaking 是doing现在分词作伴随状语的用法，它是定语从句变化而来，相当亍which overtakes，如果动词和关系代词的关系是主动，则把动词改成doing即可。That of beef的that相当亍consumption，因为不前面短语格式一模一样，所以为避免重复，用that代替。
